I know that you're screaming and yelling at me because I have broken my promise yet again. Those healthy chocolate PB breakfast cookies? Yeah, I haven't finished the recipe yet. I'll have them soon, blah blah, blah... On a more important note:
Bam. Almond Butta Cookies!
Let's talk. As you hopefully know, I currently live in the dorms. And I made these in the communal kitchen. Yeah, I took the first batch out of the oven, they lasted approximately 30 seconds.
No hate! Didn't I say yesterday that I show my love by cooking/baking for people? Yes, I was really feeling the luh. These were the first cookies I've shared with people in the dorm, and I have to say it was a great recipe to start off with! Get ready, there's more where that came from...
These cookies have just the right amount of sweetness from the brown sugar to let the almond butter be the star of the treat.
AND the simplicity of this recipe really allows you to put your own twist on it. As you can see, I decided on Christmas dark chocolate chips, MMMMMMM yeaaah.
Recipe adapted from Sally's Baking Addiction
1 1/4 cups almond butter
1 + a little more of another* eggs
1 cup chocolate chips
1/2 cup brown sugar
1 1/4 tsp baking soda
Beat the eggs in a medium sized bowl. Add everything but the chips and stir well. Fold in the chips carefully, so they're distributed equally. Using your hands, mold dough into 1 1/2 T balls. Bake for about 10 minutes and let cool for another 10. Enjoy warm!
*I found that 1 cup chocolate chips was too much for the original recipe, and since I had already made the dough, I simply added a little more of everything (except for the sugar) to make it more dough-y.
As for the healthy chocolate cookies, they will be done by Sunday night. Deal?
