Chocolate Peanut Butter No Bakes

Can I tell you a secret?

I love baking late at night. Like, really love it. Like, I get excited when everybody is asleep because that means I can make a huge mess in the kitchen and clean it up way before anybody notices.

And all that's left is a couple mouthwatering batches of fresh cookies.

I mean, you could yell. Or you could have a cookie. Or twelve.

Can we talk about these no bakes?

First, you have the base. And by that I mean the cookie part.

The cookie without those wondrous toppings is exceptional. It's absolutely a finger-licking "dough". It's a happy cookie, but if you wanna take YOUR happiness up about 10000 levels, go ahead and melt some PB and throw some c chips on there.

It looks a little like an energy bite. Energy bites are great. When you need energy. But when it's 12:30am and you have an insatiable craving for chocolate, this won't necessarily cut it.

Please, do yourself a favor and whip up a batch of these. Whether people are awake or not. You could pretend to share. Or you could go ahead and eat them at 1:30 in the morning. I won't be mad, promise.

Ingredients

1 mashed banana

1/3 cup honey

2 1/2 cups oats

1 cup peanut butter

1/4 cup milk (I used almond milk)

1/8 t salt

1/4 cup unsweetened dark cocoa powder

1/2 cup chocolate chips

Directions

Melt 1/2 cup peanut butter and mashed banana on stovetop on medium heat. Constantly stir, as the peanut butter can easily burn. Once it's melted, turn heat to low and add the rest of the ingredients except chocolate chips and the rest of the peanut butter. Stir gently, until all of the oats are covered with chocolate. Remove from heat. Form dough into balls about 1 1/2 tbsps big. Press down with spatula to make them cookie forms. (Or leave in ball form for energy bites!) Melt the rest of the peanut butter in the microwave for about 30 seconds and distribute on top of cookies. Sprinkle chocolate chips on top and ENJOY!
