Mini Cocoa Nibs
While browsing Ms.
Chocolate Covered Katie's blog, I came across
this scrumptious looking recipe. As I set out to make it, fully intending to keep my chocolate consumption to a minimum, I got sidetracked and poured cocoa powder all over these babies. I'm sure she wouldn't have opposed, and as I popped one to try it, I knew something great had happened.
The dried cherries bring a fruity kick to these, but don't overwhelm the chocolate and peanut butter goodness. If you are completely opposed to mixing fruit with sweets, alter the recipe but I'm telling you're missin' out!
Ingredients
1/2 cup old fashioned oats
A little less than 1/2 cup oat flour (grind oats in a blender or magic bullet)
1/4 cup almond milk (might need to add more for the consistency of cookie dough)
A little less than 1 T cocoa powder
2 T dried cherries
Chocolate chips
2 packets Truvia
1 1/2 Tbsp peanut butter
1 T PB2
Side note: I'm a college student who lives in the dorms and has about a foot of room to make these silly snacks. I own measuring supplies but when I use them once it takes me a couple days to wash them again. With that said, I know my baking measurements pretty well and approximate the amount of ingredients used for my recipes. So these are not exact, but pretty darn close!
Directions
Throw everything in a large bowl and mix together with your hands. They will get dirty but chocolate covered fingers? Nobody's watching ;)
Form into tbsp sized balls and enjoy! Store in the fridge for best taste.
